Mise en sommeil au début de l'année 2000, Karuizawa ferme définitivement ses portes au printemps 2012. Située aux pieds de l'un des volcans les plus actifs du Japon, Mont Asama, Karuizawa commence à distiller son malt dès 1956. Dotée de petits alambics chauffés directement et alimentés au charbon, Karuizawa produit un malt robuste et corpulent qui s'accommode parfaitement d'un élevage long en ex-fûts de sherry en provenance d'Espagne (premiers remplissages) ou de distilleries écossaises (dont Mortlach, pour les seconds remplissages). Karuizawa est un malt distillé pour réaliser les blends « Ocean » du groupe Daikoku. Les embouteillages de type single malts sont alors réservés pour le visitor center de la distillerie ou quelques clients privés. Ces mises en bouteilles à la main étaient proposées en versions single casks millésimés, bruts de fûts. Seul ce qui était nécessaire à l'embouteillage était prélevé du fût, le reste étant laissé à vieillir dans la barrique. Cette pratique explique qu'une même barrique puisse exister sous différents embouteillages d'âges et de versions différentes. Ainsi, le fût #6177, millésimé 1970, existe sous deux étiquettes : l'une de 31 ans, Distillery Edition (2002) et l'autre de 42 ans, Vintage Single Cask Edition (2012). C'est sous l'égide de la société Number One Drinks qui, en 2006, rachète les quelques 300 barriques encore disponibles à la distillerie, que Karuizawa entre dans la légende.
