LEDAIG TOBERMORY

Ecosse, île de Mull. Distillerie en production. Propriétaires : Burn Stewart, Distell.

Fondée dès 1798, l'unique distillerie de l'île de Mull fut baptisée Ledaig de 1972 à 1975 avant d'être renommée Tobermory. De cette double identité désormais assumée, sont nés deux single malts offrant deux profils complètement différents. Si cette différence peut être le fait de la distillation, dans le cas présent, il s'agit principalement de l'utilisation de tourbe au moment du maltage. Ainsi, le malt de Tobermory devient tantôt Ledaig (sorte de Mr Hyde) pour son côté ténébreux et très tourbé, tantôt Tobermory, (Docteur Jekyll) pour son profil accessible, sans aspérités et non tourbé. Ajoutez à cela un élevage qui passe d'un extrême (first fill Oloroso) à un autre (refill Bourbon), et vous aurez un aperçu de ce que sait faire cette distillerie aux mille facettes.Que l'on soit pro-Ledaig ou Tobermory, une chose est sure, le millésime 1972 vieilli en fût de sherry de premier remplissage est un OVNI dans l'univers du whisky.
