Penderyn

La distillerie galloise Penderyn créée par The Welsh Whisky Company, situé près du parc national de Brecon, a commencé à distiller en 2000 avec l'aide du célèbre consultant, décédé en 2017, Jim Swan. Elle est équipée d'une paire d'alambics Faraday, nommé ainsi d'après son inventeur David Faraday de l'université de Surrey, un alambic en cuivre à repasse surmonté d'une colonne de distillation qui lui permet de purifier encore plus le distillat, jusqu'à 92%. Expérimentant volontiers sur les fûts de vin comme le porto, le madère ou différents sherry, Penderyn est très apprécié pour la richesse et la gourmandise de son distillat.
