La distillerie Bimber, construite en 2015 à Park Royal, dans le nord-ouest londonien, est la première à s'installer à Londres depuis plus d'un siècle, la dernière ayant fermée en 1903. Bimber, qui signifie « alcool de contrebande » en polonais, a été baptisée ainsi par son fondateur Dariusz Plazewski, issu d'une famille de distillateurs et installé à Londres depuis 2003. La distillation commence l'année suivante et le premier single malt sort en 2019. La maison source son orge d'un seul producteur, utilise des aires de maltage à l'ancienne et privilégie les fermentations lentes (sept jours dans des washback en bois). Toujours dans cette optique artisanale, les alambics espagnols Hoga sont chauffés au gaz. Ambitieuse, la distillerie connaît un grand succès et chaque nouvelle édition est toujours très attendue.
Première release de la distillerie Bimber, cette édition limitée à 1 000 bouteilles a été assemblée à partir de fûts de Pedro Ximenez.
