Cuvée presentation

A single cask (#259-2-290) of Bimber distilled in 2017, aged in an Imperial Stout cask and bottled in 2023 for La Maison du Whisky. Bimber was founded in 2015 in north-west London but only started producing in May 2016. It is equipped with American white oak open washbacks which are used for the fermentation process - lasting a minimum of seven days. Extremely voluble, this version is aged in a cask previously containing an Imperial Stout and explores an incredibly diverse range of aromas and flavours, whose strength of character is equalled only by the originality of its expression. A limited edition of 257 bottles.

The distillery Bimber

The Bimber distillery, built in 2015 in Park Royal, in north-west London, was the first distillery to appear in the capital for over a century, following the closure of the last in 1903. Bimber, which is Polish for “illicit alcohol’‘, was named by founder Dariusz Plazewski, who grew up in a family of distillers and moved to London in 2003. Distillation began the following year and the first single malt was released in 2019. The company sources its barley from a single producer, uses traditional malting floors and favours slow fermentation (seven days in wooden washbacks). This artisanal approach continues with the use of gas-fired Spanish Hoga stills. The ambitious distillery has met with great success and new editions are always highly awaited.
