Ontake Distillery is located in the center of the Satsuma Peninsula in Kagoshima Prefecture, at an altitude of about 400 meters on a vast hilly area. With a view of Sakurajima (Mitake) floating in Kinko Bay, there is an abundance of transparent natural soft water that has been filtered and polished over many years. The air is clear and cool even in the hot season, making it suitable for storage. Then, began the challenge of making whisky: using yeast cultivated in-house, carefully selected two-row barley, and carefully selected old sherry barrels.
