Cuvée presentation

Produced at the Chelo distillery, owned by Michel Sajous, this Clairin-style rum has been aged for nearly four years in Haiti. It is a blend made up of 12 casks - some previously containing single malt Scotch whisky from the Benriach distillery, and others, Caroni rum. A wonderful bridge between the worlds of Clairin and of rum, both in terms of aroma and flavour, this old Sajous displays an extraordinary delicacy. With subtle hints of liquorice and very lightly toasted notes of hazelnuts and rusk, it firmly maintains its sights on the fields of Crystalline sugar cane, a non-hybrid variety that is endemic and organic to Haiti.

The distillery Chelo

The Chelo distillery was founded by Michel Sajous in Saint-Michel-de-l’Attalaye in the north of Port-au-Prince. Distillation is carried out in a small bagasse-fired pot still equipped with a six-plate column. Chelo is one of the producers selected by Luca Gargano and Daniele Biondi during a trip to Haiti in 2012 that helped introduce Clairins to a wider public.
