Ecosse, île d'Islay. Distillerie en production. Propriétaires : Diageo

Intégralement modernisée entre 1972 et 1974, Caol Ila échappa à la vague de fermeture qui frappa l'industrie du whisky écossais à partir du début des années 80. Composante essentielle de nombreux blends dont Johnnie Walker, Bulloch Lade et Black Bottle, Caol Ila resta dans l'ombre de sa très illustre sœur Lagavulin. Jusqu'à la fin des années 80, son malt est disponible en versions de 12 et 15 ans embouteillées par Bulloch Lade & Co. Au début des années 90, United Distillers lance deux gammes permettant de mettre en avant l'ensemble de ses distilleries : The Rare Malts Selection et Flora & Fauna. Quatre versions de Caol Ila seront embouteillées dans la première (éditions limitées, millésimées et brut de fût), une expression de 14 ans à 43% dans la seconde. A noter : un millésime 1983 brut de fût dans la très éphémère gamme Fauna & Flora Cask Strength et surtout un 15 ans sherry cask The Manager's Dram d'anthologie sont aussi commercialisés. Afin de soulager Lagavulin de la pression exercée sur ses stocks au début des années 2000, Caol Ila est officiellement présentée au marché en 2002 grâce à la gamme Hidden Malt et propose simultanément trois versions de son malt : un Cask Strength (55%) sans mention d'âge, un 12 ans et un 18 ans bientôt suivis par un 25 ans millésimé 1978 en 2004.
